Fruit wines are fermented from the fruits contained in their name. Plum wine, peach wine, apple wine, regardless the flavor, it will be explicitly stated on the packaging, especially if it’s not a grape product.
A very good fruit wine can be made from peaches. Ripe peaches are picked when they begin to drop and are crushed and pressed immediately, because browning and bitterness result for excessive skin contact time.
The pits must be removed in order to avoid the astringent and bitter phenolic compounds which are extracted during fermentation.
The juice is settled and fermented cool to retain the delicate character.
