The third most plentiful substance in the body other than water and protein, carbohydrate is the fuel that provides the body with the energy needed for movement, heat production and chemicals reactions.

The chemical bonds of carbohydrates lock in the energy a plant receives from the sun and this energy is released when the body burns plant food as fuel.

There are three categories of carbohydrates: simple (sugars), complex (starches), and fiber.

There are more simple sugars in fruit juice that vegetable juice, which is why you should more vegetables that fruits if you have a sugar metabolism problem.

Soluble fiber is found in juice, and both soluble and insoluble fiber is found in whole fruits and vegetables.

While both types are needed, remember that soluble fiber is proven effective in helping to control cholesterol levels.
