The name tamarind literally means ‘Indian dates’, although there is no relation between the two fruits, other than aroma.

How to make tamarind juice? Tamarind pulp –dry fruit without peel and seeds, is mixed with water in 1:1 proportion, boiled for half an hours, filtered using muslin cloth to remove all fibrous and gritty materials. Fine juice is heated to boil poured in to pre-sterilized heat resistant bottles and bottles are pasteurized in boiling water.
