Successful modern liqueurs are the cream liqueurs, especially the Irish ones. All of them show luscious butter and caramel notes and are characterized by the use of cream as one of the main ingredients. Irish cream liqueurs have a secret combination of two Ireland’s natural treasures: Irish whiskey and fresh dairy cream.
The secret lies in the way they are combined so that they remain a rich and delicious concoction rather than separating, as whiskey and cream usually do.
The traditional Irish cream liqueur is a premium product, containing whiskey as apart of the sprit content and a composition which is at high end of the milk fat range.
The first of these cream liquors was Bailey Original Irish Cream. It took the makers of Bailey all of five years to develop a process that would keep the blend of fresh cream and Irish whiskey from separating in the bottle.
Baileys proved so popular that many others have followed – Carolans Irish Cream, Devonshire Cream Liqueur and Emmets Irish Cream among others.
