The use of healthy beverage for promoting health and relieving symptom is as old as the practice of medicine.

Strawberry wine

Fruit wines are generally prepared by yeast (Saccharomyces cerevisiae) fermentation of sugared juices or diluted concentrates. Fruit wines volatiles include aroma compounds at are already present in the fresh fruit and remain unchanged during processing and aging.

Strawberry wine of good quality has the appealing color of premium rose wine. When frozen berries are employed to make wine, these are first thawed and the juice is extracted.

The juice is ameliorated to 22 °Brix by the addition of cane-sugar added in stages e.g. 25% of the total sugar added to prepare the must and the rest during fermentation.

Sweetening before aging preserves flavor and color but the sweetened wine must be stored under refrigeration to prevent refermentation.

Strawberry wine is difficult to filter. Addition of a peptic enzyme would be desirable with this variety. Treatment with enzymes mainly pectinases, inhibits polymerization and increases color extraction and color density in strawberry wine.

The composition and maturity of the fruits and mold contamination affect the quality of the wine. But over-ripe fruits with higher anthocyanins and total phenolics, give wines with better color than fully ripe fruits.

Healthy juice of strawberry

Strawberry juice is one of greatest sources of organic iron and phosphorus with which to help cleanse and build up the blood.

Fresh spring strawberries make excellent juice. The extremely soft and delicate strawberry is one of the easiest to juice. Since it is strong and somewhat thick, strawberry juice may mixed with apple juice, citrus juice or water.

Strawberry juice is rich in vitamin C and the minerals calcium, and potassium. It is also one of the few fruit juices that contain natural painkillers. These substances, called organic salycilates, are basic ingredient of painkillers such as aspirin.

The juice is not one of the most pleasant flavours but it is also one of the most useful as it contains much sugar and a fair proportion of iron.

Spring’s strawberry juice is highly cleansing to the blood tissues, and muscles. In fact strawberry juice is one of the best skin-cleansing juices known.

It is mildly laxative and acts on the kidneys. Strawberry juice should be taken regularly in cases of poor complexion, anemia, skin eruptions, sluggish liver, constipation, acidosis, obesity, and catarrh.

Strawberry contains many phenolic compounds with potential health benefits. The concentration of total phenolics in 14 strawberry has been reported to be 70.5 mg to 80.3 mg/100 g fresh weight. Add some cold water to strawberry juice and drink it three times a day to relieve pain during urination and red colored urine.
